Easy breakfast bars
Simple, quick to prep the night before a busy work or school day.
Equipment
- Mixing bowl
- Fork
- Grater
- Spatula
- Baking dish (a cake tin or silicon baking dish also works)
Ingredients
- 3 cups of organic oats
- 1 orange squeezed
- 2 green apples
- 2 large ripe bananas
- 1 cup blueberries I use frozen ones
- 3 tbsp virgin coconut oil
- 2 tbsp chia seeds or use any other seeds or chopped nuts
- 1 tbsp cinnamon
- 3 tbsp sultanas
Instructions
- Start the oven heating to around 180?
- Mash the bananas into the bottom of the bowl.
- Add all other ingredients
- Grate apple into bowl
- Mix thoroughly
- Pour into lined baking dish
- Bake for around 30 mins
Notes
This recipe is ultra flexible. You can add in whatever you like – nuts, seeds, different dried fruit … it pretty much all works.
I find if I leave the cooked bar mixture in the pan overnight, it goes a bit soggy. It’s actually still really delicious, but if you prefer it a little ‘drier’, remove it from the pan after it’s cooled a little.
We just cut it up as we eat it, so that you can take as much or as little as you like. Easy to carry out the door in a piece of greaseproof paper to eat en route.
