Easy breakfast bars

This recipe is ultra flexible.  You can add in whatever you like – nuts, seeds, different dried fruit … it pretty much all works.  

I find if I leave the cooked bar mixture in the pan overnight, it goes a bit soggy.  It’s actually still really delicious, but if you prefer it a little ‘drier’, remove it from the pan after it’s cooled a little, and flip it upside down overnight.

We just cut it up as we eat it, so that you can take as much or as little as you like.  Easy to carry out the door in a piece of greaseproof paper to eat en route – so perfect for kids and adults as they run out the door of a morning!

Equipment

  • Mixing bowl
  • Fork
  • Grater
  • Spatula
  • Baking dish (a cake tin or silicon baking dish also works)

Ingredients
  

  • 3 cups of organic oats
  • 1 orange squeezed
  • 2 green apples
  • 2 large ripe bananas
  • 1 cup blueberries I use frozen ones
  • 3 tbsp virgin coconut oil
  • 2 tbsp chia seeds or use any other seeds or chopped nuts
  • 1 tbsp cinnamon
  • 3 tbsp sultanas

Instructions
 

  • Start the oven heating to around 180?
  • Mash the bananas into the bottom of the bowl.
  • Add all other ingredients
  • Grate apple into bowl
  • Mix thoroughly
  • Pour into lined baking dish
  • Bake for around 30 mins
